4  ears  Hill Country Fare frozen corn on the cob

1/4  cup  Crisco canola oil

1  tsp.  Fajita seasoning beef or chicken

1  container (12 oz.)  H-E-B Ready, Fresh, Go!┬« pico de gallo, mild medium or hot

1  pkg. (6 oz.)  H-E-B Fresher Lasting┬« avocado chunks chopped

*  Juice of 1 lime


Spray grill rack with non-stick cooking spray to prevent sticking. Prepare charcoal or gas grill for cooking (375F). Place the frozencorn in a microwave safe baking dish and cover with plastic wrap. Microwave the corn on High power for 3 minutes.

Brush each ear of corn with canola oil and sprinkle with fajita seasoning. Grill the corn on the hot grill for 7 minutes, turning theears every 2 minutes until all sides are grilled and slightly brown.

Cut the grilled corn off of the cobs and place in a large salad bowl. Add the of pico de gallo, chopped avocado and lime juice to the grilled corn and toss to coat all ingredients. Season the salad to taste with salt and pepper if needed
