Ingredients

8   oz.  H-E-B 100% Whole Grain Penne Pasta

4   Tbsp.  olive oil, divided

4   cloves  garlic, peeled & diced

1/2   c.  mushrooms, sliced

1/2   c.  yellow onion, diced

1   c.  red cherry tomatoes, halved

1   c.  yellor or orange cherry tomatoes, halved

1/2   c.  yellow squash, diced

3   Tbsp.  balsamic vinegar

1/2   c.  lemon juice

1   bunch  fresh basil, chopped

1/2   c.  baby arugula, washed

1/8   c.  shredded parmesan cheese

Instructions


Prepare pasta as directed on box until al dente. Drain, and return to pot. Set aside.

Place a large skillet over Medium heat. Add 1 tablespoon olive oil, garlic, mushrooms, and onions. Cook until mushrooms are tender.

Reduce heat and add cherry tomatoes, squash, and a sprinkle of olive oil (if ingredients are sticking to the pan). Cover and continue to cook, stirring occasionally, until tomatoes are soft and well cooked.

Add pasta, balsamic vinegar, remaining olive oil, lemon juice, and fresh basil. Cover and cook 5 minutes, stirring occasionally. Add baby arugula, cover and continue to cook on Low until arugula is wilted.

Remove from heat, add Parmesan, and cover until cheese is melted.
