Stuffed Peppers

*  non-stick cooking spray

4   large  green bell peppers

1   lbs.  lean ground turkey breast

1   bag  H-E-B frozen salsa verde rice

4   packages  low fat cream cheese

1   package  frozen spinach, thawed & drained

1   (10-ounce) can  green enchilada sauce

1/2  cup  shredded colby jack cheese


Preheat oven to 350°F. Coat a 3-quart baking dish with non-stick spray and set aside.

Cut off the top ? of each bell pepper, remove seeds and set aside.

Place a large skillet over Medium-High heat. Spray with non-stick spray. Cook turkey, breaking up with a fork, until browned. Remove to a large bowl.

Add rice, cream cheese and spinach. Mix well. Stuff peppers with turkey mixture and place in prepared baking dish.

Top with enchilada sauce and shredded cheese; cover with foil and bake 30 minutes or until hot and bubbly.
