2 tablespoons sugar
1/4 cup Hill Country Fare Sliced Almonds
1 bag (5 oz.) H-E-B Ready Fresh Go!® Spring Mix
2 cups sliced fresh strawberries
2 rings H-E-B Ready Fresh Go!® Sliced Red Onion, separated
1/2 cup H-E-B Reduced Fat Feta Cheese
* Sweet Valentine Vinaigrette:
2 tablespoons H-E-B Extra Virgin Olive Oil
2 tablespoons H-E-B Red Wine Vinegar
1 teaspoon H-E-B Dijon Mustard
1/4 cup H-E-B Pomegranate Juice
Heat heavy skillet over medium heat and combine sugar and almonds. Stir for 3 to 4 minutes, until the sugar melts and glazes the nuts. Immediately spread almonds on a sheet of foil and cool. Break almonds apart once they are cool.
Layer spring mix, strawberries, onions, and feta cheese in a bowl. Cover with plastic wrap and chill until ready to serve.
Combine olive oil, red wine vinegar, Dijon mustard, and pomegranate juice in a bottle. Shake until blended well and set aside at room temperature.
Before serving, combine the glazed almonds and the salad. Serve with the Sweet Valentine Vinaigrette.
