3/4 cup margarine, softened
1 cup sugar
1/4 cup buttermilk
1 cup Grape Nuts cereal
2 cups strawberries, sliced in half, divided use
1 teaspoon lemon extract
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Preheat oven to 350 degrees.
Oil and flour a 5x9 inch loaf pan.
Beat margarine, sugar and eggs until fluffy.
Beat in buttermilk, cereal and 1 cup strawberries.
Let stand for 5 minutes.
Add lemon extract.
Sift flour, soda, cinnamon and salt.
Add flour mixture and remaining strawberries to liquid mixture.
Stir only until flour is moistened.
Pour into prepared pan.
Bake 1 hour or until bread tests done with toothpick.
Cool in pan 10 minutes.
Remove from pan and cool completely before slicing
