2  lb.  whole chicken

1/2  teaspoon  garlic powder

1   tsp  kosher salt

1   tsp.  black pepper olive oil

2   tbsp.  olive oil

1/3  cup  dry white wine


Remove neck and giblets if applicable. Rinse and pat chicken dry with paper towels. Sprinkle with garlic powder, salt and pepper.

In a large Dutch oven with a lid, heat oil on Medium-High. Add whole chicken, breast-side down, and sear 5 minutes until browned. Turn chicken over and add white wine and enough water to fill ¼ of dutch oven. Cover, reduce heat to Medium-Low, and cook 1 hour or until thermometer inserted in the thickest part of the thigh (avoid touching bone) reads 180°F.

Serve with sweet potato fries and sautéed spinach.
