1 (15 oz.) package fresh okra, washed
1 large yellow onion, chopped
1 tablespoon olive oil
1/4 to 1/2 teaspoon crushed red pepper flakes
2 (14 1/2 oz each) cans diced tomatoes
Prepare okra by removing stems.
Leave whole or cut into pieces, if preferred.
Heat a large, deep skillet over Medium heat.
Add oil and sauté okra and chopped onion with red pepper flakes 5 minutes.
Add tomatoes and season with salt and pepper to taste.
Reduce heat to Low and simmer 20 minutes, stirring occasionally, until okra is tender
