1  medium  jicama, cut on a mandoline to shoe strings

4  Texas oranges, sectioned and cut into bite-sized pieces

1  Texas red grapefruit, sectioned and cut into bite-sized pieces

*  juice of 1 Key lime

*  juice of 1 Meyer lemon

1/2  bunch  cilantro, coarsely chopped

1  Tbsp.  chili powder

1  tsp.  cumin

1  tsp.  salt

1  tsp.  black pepper

1/2  c.  extra virgin olive oil


In a salad bowl, mix the jicama and cut citrus together.

Thoroughly mix all fruit juices, olive oil and spices together.

Combine the jicama and citrus, the cilantro and the juice/oil dressing and toss prior to serving
