8 large H-E-B Lasagna Noodles
3 pkgs. (10 oz. each) Hill Country Fare Frozen Whole Leaf Spinach, thawed & well drained
2 egg whites
1 1/2 c. H-E-B Low-Fat Cottage Cheese
3 c. H-E-B Reduced Fat Shredded Mozarella Cheese
3/4 c. H-E-B Shredded Italian Style Parmesean Cheese
2 cans (29 oz. each) H-E-B Tomato Sauce
Preheat oven to 350°F. This recipe requires 1 very large lasagna pan.
Cook lasagna noodles according to package instructions; drain and rinse.
Mix drained spinach with egg whites.
Layer ingredients as follows: 1 1/2 cups sauce, 4 lasagna noodles, 1 1/2 cups sauce, 3/4 cup cottage cheese, 1 1/2 cup spinach mixture, 4 lasagna noodles, 1 1/2 cups sauce, 3/4 cup cottage cheese, 3/4 cup mozzarella cheese, 1 1/2 cups spinach mixture, 1/4 cup Parmesan cheese, 1 1/2 cups sauce
Cover pan with foil. Bake approximately 1 hour. Remove foil and let stand 10 minutes before cutting into 12 equal portions.
For garnish, serve extra parmesan on the side, sprinkle 1 tsp. per serving.
