Spinach Chicken Salad

2  2  bone-in chicken breast

2  c.  H-E-B Baby Spinach, chopped

1  small  onion, finely diced

1/2   c.  kalamata olives, chopped

1  Tbsp.  lemon juice

3  Tbsp.  mayonnaise


Preheat oven to 400°F. Place chicken on a foil-lined sheet pan and roast 30 minutes or until internal temperature reaches 165°F.

Remove chicken from oven and set aside until cool enough to handle.

Discard skin and bones, and shred meat using a fork. Place in a large bowl.

Add spinach, onion, olives, lemon juice, and mayonnaise. Mix until thoroughly combined, cover tightly and chill.

Perfect on sandwiches or over mixed greens with tomatoes, cucumbers and a light balsamic vinaigrette.
