1  pkg. (8 oz.)   sliced mushroom

1  can (14 oz.)   artichoke hearts, rinsed, drained, & chopped

?   ?   onion, sliced

2  cloves   garlic, chopped

5  cups   vegetable broth

2  Tbsp.   olive oil

1/2   cup   hearts of palm, chopped

12  oz.   whole wheat fettuccine, broken in half

2  tsp.   Italian seasoning

1  cup   H-E-B Baby Spinach, chopped


Combine all ingredients except spinach in a large pot. Cover and bring to a boil.

Once liquid begins to boil, reduce heat to a simmer.

Cook 10 to 15 minutes or until most of the liquid has been absorbed. Stir frequently so pasta does not stick.

Once pasta has reached desired degree of doneness, add spinach. Stir and serve hot.
