1 6.4 ounce pouch H-E-B chunk light tuna, drained
2 hard cooked eggs, peeled and chopped
1/4 cup sour cream or mayonnaise
2 tablespoons chopped pickled jalapenos (optional)
1 avocado, peeled, seeded and chopped
1/4 cup chopped red bell pepper
8 slices Nature's Own Honey Wheat Bread, toasted if desired
Place tuna, eggs, sour cream, jalapenos, avocado and rep pepper in a mixing bowl and toss to combine. Season to taste with salt and pepper.
Spread 1/3 to 1/2 cup spicy tuna sandwich spread on 4 slices of bread and top with remaining bread slices. Cut sandwiches and serve.
