2 lb. tilapia fillets
1/2 c. H-E-B Specialty Series Southwest Marinade
8 H-E-B Corn Tostadas, crushed
1/2 c. crumbled H-E-B Cotija Cheese
1 lime, cut into 8 thin wedges
1/2 c. fine chopped red bell pepper
1/4 c. chopped cilantro
Heat oven to 450°F. Line a baking pan with foil and place a grilling mesh on top. Spray grilling mesh with non-stick cooking spray and set aside.
Brush both sides of the tilapia fillets with Southwest marinade and press into crushed tostada crumbs. Place coated fillets on prepared grilling mesh. Sprinkle 1 Tablespoon crumbled Cotija cheese on top of each fillet.
Bake fillets for 12 minutes or until flaky in center. Serve fillets with a wedge of lime.
