1 lb. H-E-B Penne Pasta, cooked
1 jar (15 oz.) H-E-B Saucy Cajun Pasta Sauce
1 pkg. H-E-B Simply Seasoned Thinly Sliced Chicken Breast, cut into strips
2 c. mushrooms, sliced
1 c. cherry tomatoes
1/2 head cauliflower
2 Tbsp. olive oil
1/2 c. Parmesan cheese
1/2 c. bread crumbs
Cut cauliflower into 2 inch pieces and set aside. Preheat oven to 350°F. Bring two large pots of water to a boil.
In one large pot cook pasta according to package directions. In the second pot add in the cauliflower and cook for 2 to 3 minutes. Drain and set aside.
Heat olive oil in a large sauté pan over medium high heat. Add in chicken, tomatoes and mushrooms. Cook until thoroughly browned, approximately 7 minutes.
Combine all ingredients except bread crumbs into a large bowl and thoroughly mix. Place in a greased 9x13 pan. Cover with bread crumbs and bake for 50 minutes. Let cool slightly before serving.
