Spicy Sausage with Peppers

1  lb.  H-E-B Premium Lean Beef & Pork Sausage, poked all over with fork

1  Tbsp.  H-E-B Extra Light Olive Oil

1  container (7 oz.)  H-E-B Ready, Fresh, Go!® Diced Bell Peppers 3 Color

1  red onion, thin sliced

2  serrano chiles, seeded and thin sliced crosswise

1  tsp.  seeded and thin sliced habanero chile

*  salt and pepper

½  c.  dry red wine

½  c.  H-E-B Italian Shredded Parmesan Cheese


Heat gas or charcoal grill to 350°F (medium hot fire). Grill sausages until skins are charred and cooked through (about 16 minutes).

Heat heavy bottom skillet on stovetop over medium heat 3 minutes. Add olive oil, diced peppers, red onion, and chiles. Stir-fry until peppers are softened, (about 8 minutes.). Season vegetables with salt and pepper to taste.

Add sausages and wine to vegetables, reduce heat to medium low and cook 4 minutes or until wine is reduced by half. Place sausages and peppers in a serving dish. Top with shredded Parmesan cheese.
