2 Tbsp. canola oil
4 H-E-B Naturals Boneless, Skinless Chicken Breasts
1 can (6 oz.) mandarin oranges, drained
1 orange bell pepper, finely chopped
1/4 c. onion, diced
1 large pear, chopped
1-2 serrano chilies finely chopped with seeds
Heat oil in a large skillet over Medium- High heat. Season chicken breasts with salt and pepper place in skillet. Heat until cooked through, about 5-7 minutes on each side.
Combine oranges, bell pepper, onion, pear and Serrano chilies. Season with lime juice and salt to taste.
Divide salsa evenly on each chicken breast.
