2 Hill Country Fare Boneless Skinless Chicken Breasts, thin sliced
1/2 tsp. H-E-B Texas Originals Chicken Fajita Seasoning
2 Tbsp. Hill Country Fare Canola Oil
1 pkg. (5 oz.) Hill Country Fare Vermicelli
1 jalapeño pepper, seeded & chopped (optional)
1/2 c. onion, chopped
1 box (17.3 oz.) H-E-B Tomato Soup
1 medium zucchini, chopped into small cubes
1/4 c. cilantro, chopped
Season the thin sliced chicken breasts with the Fajita Seasoning and canola oil. Heat a large skillet on high heat for 2 minutes. Add the seasoned chicken and stir-fry for 2 minutes. Stir in the vermicelli, chopped jalapeno and onion and continue to stir-fry until vermicelli is a light golden brown (about 2 minutes).
Add the H-E-B Tomato soup, zucchini, cilantro and 1 cup water; stir. Bring to a boil, cover and lower heat to medium low for 10 minutes. Serve hot.
