Spicy Chicken & Chorizo Meatballs

15 meatballs


1  lb.  ground chicken

12  oz.  spicy chorizo

2  large  eggs, beaten

1/2  c.  Panko Bread Crumbs

2  tsp.  Kosher Salt

1  tsp.  black pepper

1/2  tsp.  garlic powder

1  c.  peanut oil


Place oil into a large flat sauté pan. Preheat on medium heat during preparation. Then preheat oven to 350°F.

In a large mixing bowl beat eggs. Add chicken, chorizo and seasoning; then stir. Add in bread crumbs and combine.

Form meat mixture into meatballs. Use your hands or use a portioning scoop.

Turn stove temperature to medium-high. Place meat balls slowly into the oil. Cook for 2 to 3 minutes until lightly browned.

Remove meatballs and place on to a foil-lined baking sheet. Bake in oven for 10 minutes.

Meatballs are ready when the internal temperature reads 165°F. Serve warm on bamboo skews.
