2  c.  Central Market Organics Israeli Couscous

1  Tbsp.  extra virgin olive oil

1 1/2  lbs.  peeled & deveined shrimp

1  shallot, chopped

1  lemon, juiced

1/2  tsp.  ground coriander

1/2  tsp.  paprika

1  tsp.  salt

1  can (16 oz.) white beans, any variety, rinsed & drained

2  Tbsp.  chopped parsley


Cook couscous according to package directions and set aside.

Place oil in a large saut´ pan over Medium-High heat. Add shrimp, shallot, lemon juice, coriander, paprika, salt and pepper. Cook 4 - 6 minutes.

Add beans and 1/2 cup warm water. Cook 5 minutes or until warm. Serve on top of couscous with chopped parsley.
