12 Tia Rosa corn tortillas, cut into thin strips
1 (14.5 ounces) can Hatch Enchilada Sauce
1/2 (32 ounces) package H-E-B Easy Melt Queso Blanco, cubed
1 (7 ounce) container H-E-B Ready Fresh Go Chopped Onion
1 (14.5 ounce) can H-E-B Diced Tomatoes & Green Chiles
1 (12 ounce) package H-E-B Fully Cooked Seasoned Beef Crumbles
1/4 cup cilantro
Heat oven to 450 degrees F. Spray a 2 1/2-quart microwave-safe baking dish with nonstick cooking spray; set aside.
Combine tortilla strips, enchilada sauce, cheese, onion, diced tomato with chiles, beef crumbles and cilantro in a large bowl; toss to coat ingredients. Pour enchilada mixture in prepared baking dish. Cover dish loosely with plastic wrap and heat in microwave oven for 5 minutes on High power.
Remove plastic wrap and bake on the center oven rack for 10 minutes until cheese is bubbly.
