5 servings of 1 1/4 cups


1  Tbsp.  H-E-B Olive Oil

1  medium yellow onion, diced

1  red bell pepper, diced

1  stalk celery, diced

2  garlic cloves, minced

1  c.  H-E-B Brown & Wild Rice

1/2  tsp.  dried thyme

1  can (15 oz.) H-E-B Kidney Beans, drained and rinsed

1/2  c.  H-E-B Cocktail Smoked Sausage, sliced

1  tsp.  salt


Heat oil in a large nonstick skillet over Medium heat. Add onion, bell pepper, and celery. Cook until vegetables soften, 3 minutes. Add garlic, cook 1 minute.

Add 2 3/4 cups water, rice, and thyme; bring to a boil. Reduce heat, cover, and simmer until rice is done, 30 minutes. Remove from heat, stir in beans and sausage. Cover and let stand 5 minutes. Salt and pepper to taste. Serve hot.
