1 large tomato, chopped
1/2 cup chopped onion
1 can (15 oz) black beans, washed and drained (optional)
1 container (16 oz) HEB chunky chicken breast with BBQ sauce
1 package (8 oz) shredded Monterrey or pepper jack cheese
1 package (12 count) corn tortillas
Heat oven to 350 degrees.
Spray a 9 x 13-inch baking dish with non-stick cooking spray; set aside.
In a large bowl, combine tomato, onion, black beans, chunky chicken breast and 1 cup of cheese; set aside.
Heat tortillas until soft.
Spread 1/4 cup chicken-tomato mixture down the center of each tortilla and roll tightly, one at a time.
Place in prepared baking dish in a single layer, seamside down.
Top taquitos with remaining chicken tomato mixture and remaining cheese.
Bake for 15-20 minutes or until cheese is melted.
