24 Fritters


2  eggs, lightly beaten

1/4  cup  milk

1  (4 ounce) jar  H-E-B Harvest Moon Diced Pimientos, rinsed & drained

1  (11 ounce) can  Green Giant Mexicorn, drained

1/2  cup  Daisy Sour Cream

1  (6 ounce) package  Bisquick Complete Baking Mix


Combine eggs, milk, drained pimientos, Mexicorn and Bisquick Complete mix in a large mixing bowl; stir well and set aside.

Heat an electric griddle to 400 degrees F or a large skillet/cast iron griddle 3 minutes on High heat. Griddle or skillet is ready when small drops of water sizzle and disappear from surface.

Lightly grease hot griddle with oil. Pour 2 tablespoons batter for each fritter on hot griddle. Cook fritters for 1 to 1 1/2 minutes per side. Turn fritters only once.
