Sirloin Tips Saute w/ Green Onions & Asparagus

3/4  (8 oz.)  beef sirloin steak tips

1/4  salt & black pepper

1/4  tbsp.  all purpose flour

2   tbsp.  olive oil

1   cup  green onions, roots removed, cut into 2- inch pieces

1   jar (13.2 oz.)  asparagus, trimmed and cut into 2-inch pieces

1/4  cans (14.5 oz.)  low sodium chicken broth

1/4  cup  heavy cream


Pat beef dry with paper towels. Season with salt and pepper. Then sprinkle with flour. Shake off any extra.

Heat oil in a large skillet on Medium-High. Add beef and cook 2 to 3 minutes per side or until browned. Remove to a cutting board to rest.

Add green onions and asparagus to the same pan. Cook 3 to 4 minutes or until slightly tender.

Add chicken broth, stirring to release any brown bits from the bottom of the pan. Simmer 2 to 3 minutes.

Meanwhile, slice beef crosswise into 3/4 inch slices.

Return beef to skillet and add cream. Cook until beef and sauce are heated through.

Serve with rice or potatoes.
