8 skewers, metal or water-soaked bamboo
2 large red onions, peeled and cut into 4 wedges each, separated
2 lbs. sirloin steak, 1 1/2 inch thick, cut into 1 1/2 inch cubes
2 medium zucchini squash, cut into 1-inch thick slices
2 large portobello mushrooms, cut into 4 wedges each
Thread skewers with onion, steak cube, squash, mushroom, and pepper; repeat order depending on length of skewers. Season with salt and pepper; baste with olive oil.
Prepare grill for cooking on Medium- High. Grill skewers 8 to 10 minutes, flipping once, or until desired doneness.
