Sirloin Stroganoff

1  Tbsp.  olive oil

1  lb.  prime sirloin steak, cut into 1 inch pieces

1  pkg. pre-sliced mushrooms, assorted

1  can sodium-free beef stock

2  Tbsp.  garlic, minced

1  tsp.  smoked paprika

2  c.  flat egg noodles, cooked

1/2  c.  nonfat greek yogurt

1  tsp.  thyme, dried

1  tsp.  black pepper

2  Tbsp.  flour


Heat oil in large sauté pan over high heat. Season the beef generously with paprika, thyme, and pepper.

Reduce heat and to Medium-High heat and add in garlic and pre-sliced mushrooms. Cook an additional 5 minutes or until beef and mushrooms have browned well.

Sprinkle the mushrooms and beef with flour and stir until flour is combined. Slowly add in the beef broth in and bring up to a simmer until sauce thickens.

Remove from the heat and stir in Greek yogurt. Serve over noodles.
