Simple Alaskan Salmon Salad

1  H-E-B Wild Alaskan Salmon Fillet

1/4  tsp.  salt & black pepper

*  Hill Country Fare No Stick Olive Oil Spray

2  Tbsp.  Easy Orange Habanero Vinaigrette, see recipe

1/2  c. sliced  cucumber

5  H-E-B Champagne Tomatoes, thin sliced

2  H-E-B Marinated Artichoke Hearts, sliced

1  thin slice  red onion, rings separated

1 1/2  c.  H-E-B Ready Fresh Go! Spring Mix


Place the frozen salmon fillet on a microwave safe dish, season with salt and pepper and spray with no stick olive oil. Cover the plate with plastic wrap and microwave on High power for 2 minutes or until the salmon is cooked to desired doneness. Discard the skin and flake.

Layer the flaked salmon, Habanero vinaigrette, cucumber, tomatoes, artichoke hearts, red onion and spring mix on a plate. Cover the plate with plastic wrap and keep refrigerated until ready to serve. Toss the salad before serving.

For Work Lunch: Place the salad in the same layers in an H-E-B Tough & Easy container and take to work. Keep refrigerated and toss before serving.
