Ingredients

1  lb.  boneless skinless chicken breast

1  tsp.  chili powder

1  tsp.  ground cumin

1  Tbsp.  olive oil

1  cloves  garlic, chopped

1  c.  cherry tomatoes

1  c.  light beer

2  c.  Cookwell & Co. Tomatillo and Green Chili Stew

1  pkg.  H-E-B Frozen Rice with Corn & Poblano

Instructions


Season chicken with chili powder and cumin.

Place a skillet on Medium-High heat. Add oil then sear chicken 4 to 5 minutes per side, depending on thickness of the chicken. Remove from pan and set aside.

To same skillet add chopped garlic and cherry tomatoes. Sauté 3 to 4 minutes or just until tomatoes burst. Add beer, Cookwell & Co. Tomatillo and Green Chili Stew, and seared chicken to the pot. Simmer 15 minutes.

Cook rice according to package directions. Serve chicken over cooked rice.
