1 package (6 oz) H-E-B Ready, Fresh, Go!® Baby Spinach
1 package (8 oz) H-E-B Fully Fit™ Extra Lean Chicken Slices
4 H-E-B Ready, Fresh, Go!® Garlic Cloves, crushed
1 Tablespoon H-E-B Extra Virgin Olive Oil
2 cups dry H-E-B Whole Wheat Penne
1 can (14.5 oz) H-E-B Sliced Tomatoes No Added Salt, chopped
8 H-E-B Kalamata Olives, pitted and coarsely chopped
1/2 to 1 teaspoon crushed red pepper flakes, according to taste
1/2 teaspoon Central Market® Organics Mediterranean Oregano
1/4 c. H-E-B Shredded Fat Free Mozzarella Cheese

Place the baby spinach in a large pasta bowl and set aside. Cut chicken into strips 1/2 inch wide by 2 inches long. Combine meat, garlic and olive oil in a medium bowl; set aside.
Cook Pasta according to package directions and keep warm.
Meanwhile, heat a large, non-stick skillet over Medium-High heat for 3 minutes. Stir-fry meat mixture 3 minutes or until completely cooked. Add chopped tomatoes, olives, crushed red pepper and oregano. Stir and bring to a boil. Remove from heat.
Add the hot cooked penne pasta and meat mixture to the spinach and toss to wilt the spinach. Top the pasta with shredded cheese and season to taste with salt and pepper. Serve immediately.
