1/4 cup Peanut oil
1 bag (16 oz.) H-E-B frozen white rice
1 bag (16 oz.) Cooked shrimp
3/4 cup Frozen peas
1 cup bean sprouts (optional)
2 Eggs lightly beaten
1 Tbsp. Sesame oil
2 Tbsp. Soy sauce
1 cup Sliced green onions
* Salt & pepper
Warm peanut oil in a large wok skillet over high heat. Once hot, add rice. Stir rice and cook until rice starts to brown. Add shrimp, continue to cook, and then add peas and sprouts.
Add sesame oil. Push rice to sides of pan to make a hole in the center. Scramble eggs.
Fold rice mixture into eggs and keep cooking. Add soy sauce. Season with salt & pepper to taste.
Pour hot rice onto a serving platter and garnish with green onions. Serve with additional soy sauce and fortune cookie
