Ingredients

1/2  c.  fresh lime juice

1/2  c.  fresh lemon juice

1  jalapeno, seeded and diced

1/2  c.  red onion, diced

1  lb.  salad shrimp

1/2  small jicama, peeled and diced

1/2  small cucumber, peeled, seeded, and diced

1  can (11 oz.) Dole Mandarin Oranges, drained

1  avocado, diced

2  Tbsp.  cilantro, minced

1  tsp.  salt

Instructions


Combine lime and lemon juices, jalapeño, and onion. Add shrimp and chill 20 minutes.

Drain marinade. Add jicama, cucumber, and oranges to shrimp.

Garnish with avocado and cilantro. Salt and pepper to taste.
