1/2 cup Warm water (91 - 99°f)
2 pkgs. active dry yeast
2/3 cup Hill Country Fare evaporated milk
1 can (12 oz.) Shiner Bock beer
5 tablespoons H-E-B Butter melted
6 tablespoons H-E-B Granulated Sugar
1 tablespoon salt
7 cups H-E-B Bread Flour
Combine the warm water and active dry yeast in a medium size mixing bowl. Allow the yeast to set10 minutes so that it begins to bubble and foam.
Place evaporated milk in a microwave safe bowl and heat on High power for 1 minute. Combine the heated milk, beer, melted butter, sugar and salt in a large mixing bowl. Add the bubbling yeast to the beer mixture and place in the electric mixer bowl. Sift in the flour and mix on low speed using a kneading hook for 7 minutes. If you are mixing by hand, combine the flour with the yeast mixture and knead on a floured work surface for 7 minutes. Place the bread dough into a large sprayed bowl and cover with a sheet of sprayed plastic wrap. Place the bowl in a warm area of the kitchen and allow the dough to rise for 2 hours
Knead dough a second time either with the mixer & dough hook or by hand for 7 more minutes. Place the dough back into the sprayed bowl, cover and allow to rise for 15 minutes.
Spray 3 bread loaf pans (8 1/2 x 4 1/2 x 2 1/2 -inch) with non-stick cooking spray. Separate the dough into 3 bread pans and let rise for 1 hour 20 minutes. When there is 10 minutes left of rising time, preheat oven to 350F. Bake the loaves for 45 minutes.
