*  nonstick cooking spray

1   lb.  lean ground beef

1   small  onion, chopped

1   cloves  garlic, chopped

1/2  tsp.  salt

1   tsp.  black pepper

1/2  teaspoon  dried thyme

1   Tbsp.  H-E-B Organics Ketchup

1   tbsp.  all purpose flour

1   pound  frozen mixed vegetables

1   head  frozen cauliflower

1   c.  H-E-B Plain Nonfat Greek Yogurt

1/2  cup  shredded parmesan cheese


Preheat oven to 400°F. Spray a large baking dish with nonstick cooking spray and set aside.

In a large skillet over Medium-High heat, cook beef, onions, and garlic together until meat is well-browned. Add salt, pepper, thyme, and ketchup. Sprinkle in flour and stir to combine. Add 1/2 cup water and frozen mixed vegetables. Cook until vegetables are warm throughout and liquid has thickened. Transfer meat and vegetable mixture to prepared pan.

Meanwhile, boil cauliflower until very tender. Strain in a colander, return to pan, and add yogurt and parmesan cheese. Using a hand held mixer, whip cauliflower until smooth. Spread over meat mixture and then bake uncovered 20 minutes or until browned.
