2 tablespoons Central Market European Butter
1 cup chopped onion
1/2 teaspoon ground nutmeg
2 containers (5 oz.) fresh Central Market Organics™ Baby Spinach
1/2 cup H-E-B Cottage Cheese, regular or fat free
Heat a skillet over medium heat for 2 minutes. Add butter and chopped onion. Stir-fry the onion for 2 minutes. Stir in spinach and nutmeg. Stir-fry spinach uncovered for 2 minutes.
Stir the cottage cheese into the spinach mixture. Season the creamed spinach with salt and pepper and serve.
