1 cup Corn Flakes
1 bag (16 oz) frozen broccoli Normandy or winter mix
2 tbsp. butter or margarine, melted
1/2 cup chopped onion
1 cup shredded pepperjack cheese or Italian blend cheese
Heat oven to 350°F.
Spray a 1 1/2 quart baking dish with non-stick cooking spray and set aside.
Place Corn Flakes cereal in a plastic food bag and crush; set aside.
Cook frozen vegetables according to package instructions; drain well and set aside.
Beat eggs in a medium-size bowl. Add crushed cereal, cooked vegetables, butter or margarine, onion and cheese; stir to combine. Salt and pepper, to taste.
Spread cereal-vegetable mixture in prepared baking dish. Bake uncovered for 20-30 minutes or until mixture is hot and bubbly.
