Ingredients

2  c.  baby carrots

1  rutabaga, peeled and cut into 2-inch diagonal chunks

1  turnip, peeled and cut into 2-inch diagonal chunks

1  sweet potato, peeled and cut into 2-inch diagonal chunks

2  parsnips, peeled and cut into 1-inch chunks

8  tiny red potatoes, cut into halves

8  button mushrooms

8  whole garlic cloves, thin sliced

1  small red onion, cut into 8 wedges

⅓  c.  H-E-B Extra Virgin Olive Oil

1  Tbsp.  Central Market® Organics Herbes de Provence

*  Kosher salt and fresh cracked pepper to taste

Instructions


Heat oven to 450°F. Line a deep roasting pan with heavy-duty foil and spray with nonstick cooking spray.

Combine all ingredients in the prepared roasting pan and toss well to coat.

Roast on center oven rack for 45 minutes, stirring every 15 minutes. Remove from oven, transfer to a serving dish, and enjoy!
