Savory Quinoa Pilaf

Ingredients

1  tsp.  H-E-B Olive Oil

2  Tbsp.  shallots, chopped

1/2  c.  red bell pepper, chopped

1  c.  mushrooms, chopped

1  c.  Central Market Organics Ancient Grains Quinoa

3/4  c.  H-E-B Garlic Chicken Broth

Instructions


Heat heavy bottom skillet over high heat 2 minutes. Add olive oil, shallots, bell pepper, and mushrooms; stir-fry 2 minutes. Add quinoa, stir-fry 1 more minute.

Add garlic chicken broth and 3/4 cup water to mixture. Bring to boil, reduce heat, cover. Cook 15 minutes. Place in serving dish, enjoy!
