20  ounces  salmon fillets

1  tablespoon  chopped fresh dill

3  tablespoons  prepared tartar sauce

1/4  teaspoon  salt

1/4  teaspoon  ground black pepper

4  sesame seed Kaiser rolls

*  bibb, boston, or butter lettuce leaves

*  red onion slices

1  lemon

1  tablespoon  chopped fresh dill

1/2  cup  prepared tartar sauce


Place salmon on a clean cutting surface, skin-side down. Use a sharp knife to cut salmon flesh from skin. Discard skin. Cut salmon into 1-inch cubes.

Chop 1 tablespoon dill. Place dill, salmon, 3 tablespoons tartar sauce, salt and pepper in a food processor. Pulse on/off to process until coarsely ground. Spread mixture out on a plate; cover and refrigerate (or place in freezer) 5 to 10 minutes until chilled and easy to handle.

Meanwhile, prepare dill tartar sauce. Zest lemon peel to make 1 teaspoon. Chop dill. Combine tartar sauce with lemon zest and dill and set aside. Split Kaiser rolls.

Form salmon mixture into 4 patties, 1/2-inch thick. Heat a large non-stick skillet over medium-high heat. Pan broil patties (cook without oil) 4 to 5 minutes per side, in 2 batches.

While salmon cooks, lightly toast rolls in broiler or toaster oven. Spread dill tartar sauce on cut sides of rolls. Layer burgers, lettuce and onion on bottom halves of rolls; top with remaining halves. Serve immediately.
