Sage & Mustard Roasted Pork Loin

2 to 3  lbs.  boneless center cut pork loin roast

2  tsps.  McCormick Rubbed Sage

2  tsps.  McCormick Dry Mustard

2  tsps.  each McCormick Salt and McCormick Coarse Black Pepper

1  tsp.  McCormick Ground Ginger

2  tbsps.  olive oil

6  cloves  garlic, crushed or minced


Combine dry seasonings for paste. Stir in olive oil and garlic.

Lay pork on a rack in a shallow roasting pan, fat-side up. Rub seasoning paste over top of roast. Let stand 1 hour.

Heat oven to 350 degrees.

Roast pork 40 to 90 minutes, uncovered, until center of roast reaches an internal temperature of 150 degrees.

Let stand 15 minutes before carving into 1/4-inch thick slices. Pork should have a light pink blush in center
