2 pounds Season's Select® Red Potatoes
20 slices prosciutto, halved lengthways
1 bunch rosemary, cut into 2-inch sprigs
* olive oil cooking spray
* salt & pepper
Place potatoes in a large sauce pan. Cover with cold water and bring to aboil over high heat. Reduce heat to medium. Boil gently, partially covered, for 10 minutes or until a skewer inserted into potatoes comes out easily. Drain.
Preheat oven to 325°F. Wrap 1 slice prosciutto around each potato and secure with a rosemary sprig. Place potatoes in a single layer in a large roasting pan. Spray with oil. Season with salt and pepper. Roast for 30 to 35 minutes or until potatoes are golden and crisp.
