1 lb. Red potatoes cut into 1-inch wedges
1 Onion peeled and cut into wedges
1/3 cup H-E-B Texas Twists roasted poblano caesar dressing
1/4 cup Grated H-E-B cotija cheese
Heat oven to 425F. Spray a baking dish with nonstick cooking spray.
Combine potato and onion wedges and H-E-B Texas Twists Roasted Poblano Caesar Salad Dressing in a plastic zipper bag and toss to coat. Pour potato mixture in prepared baking dish and bake on center oven rack for 35 minutes or until potatoes and onions are golden and fork tender. Sprinkle with grated Cotija cheese and serve
