Ingredients

2  pounds  small red potatoes (20 to 24, size ?Ç£C?Ç¥)

2  tablespoons  olive oil

3  each  large cloves garlic, crushed

1  teaspoon  salt

1/2  teaspoon  ground black pepper

1/3  cup  shredded Parmesan cheese

Instructions


Heat oven to 375 degrees F.

Wash potatoes, pat dry and cut into 1/2-inch cubes.

Combine olive oil, garlic, salt and pepper in a large bowl; add potatoes and toss to coat.

Spread onto a large baking sheet and roast 1 hour, stirring every 20 minutes.

When potatoes are tender and lightly browned, remove from oven and sprinkle with cheese.

Heat oven broiler.

Broil potatoes 4 inches from heat source, until cheese is melted and crispy, about 5 minutes
