1 1/2 cups shredded roast beef
4 slices onion, cut in half and separated
2 fresh jalapenos, seeded and cut into thin strips (optional)
1 package (12 count) corn tortillas
2 cups HCF shortening
Combine shredded roast beef, onion and jalapeno strips in a medium-size bowl.
Heat tortillas until soft.
(To heat tortillas in microwave, remove twist tie from package and heat in plastic bag on High power for 1 to 2 minutes or until soft and pliable.
Spread 3 tablespoons roast beef mixture down the center of each tortilla and roll tightly, one at a time.
Secure each flauta with a toothpick and set aside.
Heat shortening in a heavy skillet over medium-high heat or a deep fryer to 375 degrees.
Fry 4 flautas at a time for 2 minutes, turning once during frying.
Remove flautas and place paper towels to drain
