3 ripe bananas, mashed
1 cup sugar
1/4 cup canola oil
1/2 cup applesauce
2 cups flour
2 teaspoon baking soda
3 tablespoon lowfat buttermilk
2 tablespoon vanilla extract
Preheat oven to 300 degrees.
Spray or wipe muffin pans with vegetable oil.
Mix bananas, sugar, egg, oil and applesauce in large mixing bowl.
Add flour and baking soda, mix until just blended.
Add buttermilk and vanilla, blend again.
Do not over mix.
Drop dough into muffing cups, filling two-thirds full.
(An ice cream scoop makes portioning batter easy.) Bake 25 to 30 minutes, or until a toothpick comes out clean
