Rice with Toasted Almonds & Cranberries

Ingredients

2  Tablespoons  butter

1/4  cup  Each: almond slivers & dried cranberries

1  cup  Texmati rice

1  H-E-B Ready, Fresh, Go!® scallion thin sliced

2  cups  Central Market™ Organics chicken broth

2  Tablespoons  Fresh grated orange peel

Instructions


Heat a 2 quart pot over medium low heat. Add the butter,almonds and cranberries. Stir-fry for 1 minute until the almondsturn golden. Remove the almonds and cranberries from the panand place in a dish.

Add the rice and sliced scallion to the heated pot and stir-fry withthe remaining butter over a medium low heat (about 2 minutes).Add 2 cups of chicken broth and bring the mixture to a boil overhigh heat. Reduce heat to low, cover and cook for 20 minutes.Place the rice in a serving dish and top with toasted almonds,cranberries and orange peel
