1  cup  long-grain white rice

1/2  cup  finely chopped onion

1/4  cup  finely chopped carrot

1/4  cup  finely chopped celery

1  tablespoon  butter

1  (14.5 ounce) can  chicken broth


Chop onion, carrot and celery. Melt butter in a 2-quart pot over Medium-High heat. Sautèacute; onion, carrot and celery 3 to 5 minutes until tender.

Add chicken broth and rice; bring to a boil. Reduce heat to Low, cover and cook 15 minutes or until liquid is absorbed. Fluff with a fork and serve while hot
