4  each  H-E-B fully cooked Chicken Fried Chicken Breasts

2 (12 oz)  bags  American Salad Blend

1  pint  cherry tomatoes

1/2  cup  low-fat buttermilk

1/3  cup  low-fat mayonnaise

1/3  cup  non-fat plain yogurt or lite sour cream

1  clove  garlic, crushed

1  tablespoon  grated onion

1  tablespoon  snipped fresh chives

1  teaspoon  fresh lemon juice

1  teaspoon  olive or vegetable oil


Heat chicken breasts in microwave according to package directions.

Meanwhile, combine dressing ingredients in a large bowl.

Cut cherry tomatoes in half.

Slice each chicken breast (after heating) diagonally into 1/2-inch thick slices.

Toss salad and tomatoes with dressing.

Arrange salad on 4 individual plates.

Top each salad with one chicken breast.

Serve immediately.
