1 loaf Hill Country Fare frozen Texas toast
2 cups each H-E-B frozen baby carrots & H-E-B green peas
1 med Onion cut into large chunks
1 jar (9.9 oz.) H-E-B Harvest Moon?É?Äó sliced mushrooms
4 cups Cooked turkey cut into 1 1/2-inch cubes
1 can (15 oz.) Hill Country Fare cream of celery soup
Prepare the Texas Toast in oven according to package directions and keep warm.
Meanwhile, cook the baby carrots according to package directions and drain. Combine the cooked carrots and the frozen peas in a large microwave-safe baking dish and set aside.
Heat a large skillet over high heat for 3 minutes. Spray the skillet with non-stick cooking spray and add the onion chunks. Stir-fry the onions for 4 minutes over high heat until the edges are crusty golden brown. Add to the vegetable mixture.
Add the mushrooms with liquid, cooked turkey and cream of celery soup to the vegetable mixture. Toss the turkey mixture and season to taste with salt and pepper. Cover with plastic wrap and heat in the microwave oven on High power for 6 minutes or until the stew is heated through.
Serve the stew with hot Texas Toast
