4 - 6 servings
3 (14 1/2 oz.) cans chicken broth
1 to 2 cups cooked, diced turkey
16 ounces frozen vegetable medley or stir-fry vegetables
2 cups fried tortilla strips
1/2 cup chopped, fresh cilantro
Pour chicken broth into a 4-quart pot.
Place over high heat and bring to a boil.
Add turkey and vegetables and cook for 5 minutes or until broth begins to boil again.
Reduce heat to simmer and cook for 5 more minutes.
Garnish with tortilla strips and cilantro, if desired
