2 cans (10 oz. each) Rotel® original diced tomatoes & green chilies drained
1/2 cup Chopped fresh cilantro
1 can (16 oz.) Rosarita® traditional refried beans
4 Mission burrito-size flour tortillas
1 cup Shredded mexican blend cheese
* Pam® original no stick cooking spray
Combine tomatoes and cilantro in a small bowl for salsa and set aside.
Spread 1/4 of the beans on half of each tortilla. Sprinkle 1/4 cup cheese blend over beans. Fold each tortilla over beans and cheese to form half-moon shape.
Lightly spray quesadillas with cooking spray. Heat a large skillet or griddle over medium-high heat for 3 minutes. Grill one or two quesadillas on each side for 2 minutes or until lightly browned and cheese is melted. Repeat withremaining quesadillas. Cut each quesadilla into 3 wedges and serve with prepared salsa
